Easy Pumpkin Bread

This is my go-to pumpkin bread recipe.  The recipe makes two loaves – one to eat, one to share or freeze for later.  I use the ALDI pumpkin because it’s just $.99 per can.  I always have it on-hand for this recipe.

Easy Pumpkin Bread

1 15-oz. can pumpkin
3 C. sugar
1 C. oil
4 eggs
3/4 C. water
3 1/2 C. flour
2 tsp. baking soda
1 1/2 tsp. salt
2 1/2 tsp. nutmeg
2 1/2 tsp. cinnamon

Preheat oven to 350 degrees. In a mixing bowl, combine the pumpkin, sugar, oil, eggs and water.  Blend well.  Add dry ingredients and mix until well-incorporated.  Pour into two greased bread pans.  Bake for one hour.
